Length of fermentation:
traditional vinification with spontaneous fermentation in wooden vats for about 15 days at 26°C. The grapes are destemmed and undergo soft crushing, then the must is pumped over using the dèlestage system in order to maximise the extraction of colour and varietal aromas. After malolactic fermentation, the wine is placed in Austrian oak barrels for approximately 12 months with regular top-ups of the level and tasting tests in order to guarantee its good evolution as much as possible.
the grapes come from the vineyard located in the MGA STERLOTTI that combines a special structure and elegant verticality due to the sandy/gravely soil of the area.
